At Hunters Coffee, we like to look for new challenges, embark on adventures, break down prejudices and push limits.
There are more than 500.000 coffee producers in Colombia, 80% or more are having less than 3 hectares. Coffee is grown all over the country and is spread out in 19 departments (regions), most of them along the three mountain ranges coming from the Andes in the south. The biggest and most well-known regions are Antioquia, Huila, Tolima, Cauca, Nariño, Caldas, Santander and Sierra Nevada.
Juan Saldarriaga is one of the most innovative producers in all of Colombia. On its farms El Encanto and La Claudina in the region of Antioquia, it grows experimental varieties and tests various processing methods. One of these methods is the technique of drying natural products in a so-called Cold air dryer. It is about drying coffee in closed cubicles, through which air flows and it is the humidity and temperature of the air stream that Juan is able to control and thus ensure consistent results in the processing of natural products. Thanks to this method, the coffees are dried evenly for about 20 days, which gives them incredible complexity and sweetness, because the grain has enough time and optimal conditions to absorb nutrients from the skin.
