Santa Cristina farm is owned by Hernandéz Renemu family and his wife and it is located in San Salvador region in Quezaltepeq Mountains.
Beans are processed by the orange honey method. This means that coffee cherries were peeled and dried together with remaining pulp on shaded beds for 10 days. The sugar in the pulp and sun radiation turn the dried beans orange. This processing method along with the Red Bourbon sort make the coffee taste after oranges, cane sugar, cocoa and pecan nuts.
Coffee beans are roasted in the Loring S7 Nighthawk machine that uses convection for spreading heat, i.e. hot air. This method allows working precisely with taste nuances of this coffee and maintain juiciness and sweetness that is typical for our single-sort, Expedition selection coffee.
